Quick Fruited Couscous
|Orange juice||2 1⁄4 Cup (36 tbs)|
|Grated orange peel||1 Teaspoon|
|Couscous||10 Ounce (1 Package)|
|Orange||1 Medium, peeled, separated into sections and cut into halves|
|Red grapes||1 Cup (16 tbs), cut into halves|
|Firm tofu||6 Ounce, drained, cubed|
|Golden raisins||1⁄2 Cup (8 tbs)|
1. Bring orange juice, margarine, orange peel and salt to a boil in large saucepan over high heat. Stir in couscous; cover and remove from heat. Let stand 5 minutes.
2. Fluff couscous with fork; stir in orange pieces, grapes, tofu and raisins until well blended. Serve immediately or cover and refrigerate.
