Quick Fruited Couscous

Ingredients
  Orange juice 2 1⁄4 Cup (36 tbs)
  Margarine 1 Tablespoon
  Grated orange peel 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Couscous 10 Ounce (1 Package)
  Orange 1 Medium, peeled, separated into sections and cut into halves
  Red grapes 1 Cup (16 tbs), cut into halves
  Firm tofu 6 Ounce, drained, cubed
  Golden raisins 1⁄2 Cup (8 tbs)
Directions

1. Bring orange juice, margarine, orange peel and salt to a boil in large saucepan over high heat. Stir in couscous; cover and remove from heat. Let stand 5 minutes.
2. Fluff couscous with fork; stir in orange pieces, grapes, tofu and raisins until well blended. Serve immediately or cover and refrigerate.
