Gluten Free Herbs And Pecan Quinoa With Pomegranate Dressing

KC Pomering from G-Free Foodie shows you how to make Quinoa with Fresh Herbs, Pecans & Pomegranate Dressing.
Ingredients
  Quinoa 3 Cup (48 tbs), cooked and cooled
  Fresh herbs 1⁄3 Cup (5.33 tbs) (parsley, basil)
  Feta cheese 4 Ounce, crumbled
  Pecan 1⁄4 Cup (4 tbs), chopped
  Pomegranate seeds 1⁄4 Cup (4 tbs)
  Extra-virgin olive oil 3 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Pomegranate concentrate 2 Tablespoon
  Lemon juice 1 Tablespoon
Directions

MAKING
1. In a large bowl, combine the quinoa, herbs, pecans, and feta cheese and pomegranate seeds. Set aside.
2. In a separate bowl, whisk together oil, pomegranate concentrate, lemon juice, salt and pepper.
3. Pour the dressing over the quinoa and mix.

SERVING
4. Serve Herbs and Pecan Quinoa with Pomegranate along with grilled chicken and enjoy!
