Quick Couscous And Zucchini

Ingredients
  Zucchini 1 Medium, cut into 2 x 1/4-inch strips
  Sliced green onion 2 Tablespoon
  Snipped fresh parsley 1 Tablespoon
  Reduced sodium soy sauce 2 Tablespoon
  White wine 2 Tablespoon
  Garlic powder 1 Dash
  Ground ginger 1 Dash
  Uncooked couscous 1⁄2 Cup (8 tbs) (Uncooked)
  Water 1⁄2 Cup (8 tbs)
  Reduced calorie margarine 1 Tablespoon
Directions

In 1 1/2-quart casserole, combine zucchini, onion, parsley, soy sauce, wine, garlic powder and ginger.
Stir.
Cover.
Microwave at High for 2 to 3 minutes, or until color brightens on zucchini.
Stir in remaining ingredients.
Re-cover.
Microwave at High for 2 1/2 to 4 minutes longer, or until mixture boils.
Let stand, covered, for 3 minutes.
Toss lightly.
