Millet N Vegetables

Ingredients
  Chopped carrots 1 Cup (16 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Diced peeled potato 1 Cup (16 tbs)
  Chopped parsnip/White turnip 1⁄2 Cup (8 tbs)
  Shredded cabbage 1 Cup (16 tbs)
  Chopped parsley 1⁄4 Cup (4 tbs)
  Whole hulled millet 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Water/Homemade vegetable broth 2 1⁄2 Cup (40 tbs)
  Vegetable oil 1 Tablespoon
Directions

1. Put all the vegetables in a heavy porcelainized iron casserole. Add the parsley, millet, salt, and 2 1/2 cups water. Bring to a boil, cover, and cook gently for 45 minutes.
2. If mixture seems too thick, add a little water and cook for 15 minutes longer. Drizzle the oil over surface before serving.
