Curried Whole Wheat Couscous Pilaf
|Onion||1 Small, chopped|
|Garlic||1 Clove (5 gm), minced|
|Butter||30 Milliliter (2 Tablespoon)|
|Mushrooms||240 Milliliter, sliced (1 Cup)|
|Red bell pepper||1⁄2 , chopped|
|Frozen peas||120 Milliliter (1/2 Cup)|
|Green onions||120 Milliliter, chopped (1/2 Cup)|
|Water/Broth||355 Milliliter (1 1/2 Cups)|
|Curry powder||2 Teaspoon|
|Whole wheat couscous||240 Milliliter (1 Cup)|
In a covered saucepan on low heat, saute onion and garlic in butter until soft.
Add mushrooms, red bell pepper, peas and green onions and cook until nearly tender.
Add water, salt and curry powder and bring to a boil.
Add couscous, stir, reduce heat, cover and cook for 3-5 minutes or until liquid is absorbed.
