Beef Goulash

  Stewing beef 1 1⁄2 Pound
  Oil/Dripping 2 Tablespoon
  Onions 2
  Paprika 1 1⁄2 Tablespoon
  Tomato paste 1 1⁄2 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Pepper To Taste
  Sugar 1⁄2 Teaspoon
  Water 1 Cup (16 tbs)

Trim beef and cut into small cubes.
Heat oil or fat in a heavy saucepan and brown beef quickly on all sides (do this in two lots).
Lift meat out and put aside.
Reduce heat, add onion to pan and saute until soft.
Add paprika, tomato paste, salt and pepper, sugar and water.
Bring to simmering point, return meat to saucepan and reduce heat.
Cover tightly with lid and simmer gently for 1 1/2-2 hours or until meat is tender and sauce has thickened.
