Goulash

Ingredients
  Lard 2 Ounce (50 Gram)
  Onions 2 Large, peeled, finely chopped
  Garlic 1 Clove (5 gm), peeled, finely chopped
  Hungarian sweet paprika 1 Tablespoon
  Beef shin 2 Pound, cut into cubes (Kilogram)
  Caraway seeds 1 Teaspoon
  Salt To Taste
  Tomatoes 12 Ounce (400 Gram)
  Potatoes 2 Large, peeled and cut into small cubes
  Green peppers 2 , cut into strips
Directions

Melt lard in a large casserole, and add onions and garlic.
Fry gently, until soft and golden.
Remove pan from heat, and stir in paprika.
Return to heat, and add a little water.
Then add meat, caraway seeds, salt, and tomatoes.
Mix thoroughly, cover, and cook for 15 hr., or until meat is almost tender.
Add potatoes and peppers.
Pour in sufficient water to cover meat.
Bring to the boil, simmer, cook until potatoes are tender.
Serve in bowls, with galuskas.
