Goulash Soup

Ingredients
  Vegetable oil 2 Tablespoon
  Onion 1 , chopped
  Boneless stewing beef 1 Pound, cut into bite size pieces
  Garlic 1 Clove (5 gm), minced
  Hungarian sweet paprika 1 Tablespoon
  Caraway seeds 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Warm water 4 Cup (64 tbs)
  Tomato 1 , peeled, seeded and chopped
  Green pepper 1 , seeded and sliced
  Potatoes 2 , peeled and diced
  Chopped fresh parsley 1 Tablespoon
Directions

In large saucepan, heat oil over medium-high heat; cook onion until tender. Add beef and cook, stirring, until browned all over.
Combine garlic, paprika, caraway seeds and salt; add to beef mixture and stir to combine. Return pan to heat and stir in water. Cover and simmer for 1 hour.
Stir in tomato and green pepper; cover and simmer for 30 minutes. Add potatoes and additional water if thinner soup is desired; simmer, covered, for 30 minutes. Taste and adjust seasoning if necessary. Garnish each serving with parsley.
