Roast Goose With Plum Preserve
|Apple||1 , quartered|
|Plum preserves||1 Cup (16 tbs)|
Prepare goose for cooking following general instructions.
Fill cavity with apricots, prunes, apple, and salt.
Before cooking, generously pierce skin with tines of fork to allow fat to drain into dish during cooking.
While cooking, drain excess fat from dish to prevent spatter.
Cook on roast (7) for 8 minutes per pound.
Glaze with preserves after half of the cooking period.
