Roast Goose With Baked Apple

Ingredients
  Goose 8 Pound (1 Bird)
  Bread crumbs 2 Quart
  Onions 2 , chopped
  Fat 2 Tablespoon
  Sage 1 Teaspoon
  Salt 2 Teaspoon
  Pepper To Taste (Small Amount)
  Apples 8
  Brown sugar 1⁄4 Cup (4 tbs)
  Sweet potatoes 3 , cooked, mashed
Directions

GETTING READY
1.Start by preheating the oven to 325F degrees
2.Also wash and core apples
MAKING
3.In a pot, cook giblets until tender
4.Also chop and mix with bread crumbs, onion, fat, sage, salt and pepper
5.Clean and wash the goose thoroughly
6.Take salt and rub inside of goose, also stuff bread mixture and truss
7.In a roaster on a rack, place the goose and roast uncovered in a slow oven for 25 minutes per pound
8.Skim off fat from broth in pan, every hour of roasting
9.Place the apples and sprinkle with brown sugar, stuff with seasoned sweet potatoes
10.In the pan, place it besides the goose just 1 hour before the goose is done
SERVING
11.Serve with baked apple around the goose
