Roast Goose With Baked Apple

Ingredients
  Bread crumbs 2 Cup (32 tbs)
  Fat 2 Tablespoon
  Onion 1
  Sage 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Pepper 1 Pinch
  Goose 8 Pound
  Apples 8
  Brown sugar 1⁄4 Cup (4 tbs), packed
  Sweet potatoes 3
Directions

Combine bread crumbs, onion, 2 tablespoons fat, sage, salt and pepper; mix well.
Cook giblets until tender; chop.
Combine giblets with dressing mixture.
Stuff goose with dressing; lace opening closed with string.
Place goose on rack in roasting pan.
Roast at 500 degrees for 15 minutes.
Reduce heat to 350 degrees; roast for 3 hours longer or until drumstick moves easily.
Wash and core apples; sprinkle with brown sugar.
Stuff with seasoned sweet potatoes; bake until tender.
Serve with goose.
