Roast Goose

Ingredients
  Chopped onion 1⁄2 Cup (8 tbs)
  Butter 1⁄4 Cup (4 tbs)
  Dry bread cubes 4 Cup (64 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Eggs 2
  Sausage 1 Pound
  Goose 10 Pound
Directions

Saute onion in butter.
Soak bread in water; squeeze out excess moisture.
Combine onion, bread, salt, pepper, eggs and sausage; mix well.
Stuff goose with mixture.
Place in roasting pan, breast-side down, in 3 inches of boiling water.
Bake, covered, at 350 de- grees for 1 hour.
Drain off water.
Bake, back-side down, basting occasionally, for 2 hours longer or until drumstick moves easily.
