Wild Goose With Wlld Rice
|Wild rice||1 Cup (16 tbs)|
|Melted butter||1⁄4 Cup (4 tbs)|
|Chopped celery||3 Tablespoon|
|Chopped onion||2 Tablespoon|
|Consomme||1 Can (10 oz)|
Cover goose with salted water; let stand overnight.
Drain goose; place onion, carrot and apple in cavity.
Place goose in electric roaster; add 1 inch hot water.
Roast, covered, at 325 degrees for 2 hours.
Cook rice according to package directions; drain.
Stir in season- ings, butter, celery, chopped onion, green pepper and pimento.
Remove goose from roaster; take onion, carrot and celery from cavity.
Stuff goose with rice mixture; return to roaster.
Combine con- somme and 3/4 cup water; pour over goose.
Roast, covered, for 2 hours longer; baste goose occasionally with pan liquid.
