Roast Christmas Goose
|Apples||3 , pared cored and diced|
|Carrots||2 , grated|
|Spanish onion||1 , finely diced|
|Celery stalks||2 , finely diced|
|Seedless raisins||250 Milliliter|
|Walnuts||250 Milliliter, blanched peeled|
|Stale bread cubes||750 Milliliter|
|Garlic||1 Clove (5 gm)|
|Safflower oil||15 Milliliter|
Mix the apples, carrots, onion, celery, raisins, walnuts, bread, milk and seasonings together.
Stuff the mixture into the goose, truss the goose.
Place in a large roaster.
Rub goose with garlic and brush with the oil.
Sprinkle with paprika.
Place in a preheated 350°F (180°C) oven for 3 1/2 to 4 hours.
Baste several times during cooking.
When the goose is cooked remove from the roaster, place on a serving platter and keep warm.
Deglaze the pan juices, mix the cornstarch with 2 tbsp (30 ml) of water.
Pour into pans juices.
Bring to a boil.
Strain into a sauce boat and serve with the goose.
