Roast Goose With Apple Stuffing

Ingredients
  Butter/Margarine / goose fat 1⁄4 Cup (4 tbs)
  Thinly sliced celery 1 Cup (16 tbs)
  Finely chopped onion 1 Cup (16 tbs)
  Fresh bread cubes 5 Cup (80 tbs)
  Chopped apples 2 Cup (32 tbs) (2 Medium Ones)
  Egg 1 , beaten
  Brandy 1⁄4 Cup (4 tbs)
  Parsley flakes 1 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Goose 10 Pound
  Browning sauce 1⁄4 Cup (4 tbs)
Directions

In large glass bowl, combine butter, celery and onion.
Heat at high 5 to 6 minutes, or until celery and onion are tender.
Add bread, apples, egg, brandy, parsley, salt and pepper; combine thoroughly.
Stuff goose with apple mixture; secure opening with wooden toothpicks or string.
Secure wings and legs to body of bird with string.
Pierce skin several times and arrange bird, breast-side down, on microwave oven safe roasting rack set in oblong baking dish; brush with browning sauce.
Heat at medium 30 minutes; turn bird over and drain fat.
Heat at medium 25 to 30 minutes, or until bird is tender.
