Wild Goose Becancour

Ingredients
  Wild goose 1 , cut in pieces and marinated in white wine for two days
  White wine 2 Cup (32 tbs)
  Salt pork slices 4
  Onions 2 , minced
  Apples 5 , pared and minced
  Garlic 2 Clove (10 gm), minced
  Apple juice/Cider 1 Cup (16 tbs)
  Marinade 1 Cup (16 tbs)
  Strained capers 1 Tablespoon
Directions

Place salt pork, onions, apples and garlic in baker.
Add pieces of bird.
Dot with herbs, .season.
Pour apple juice or cider and marinade.
Close and bake.
Before serving, sprinkle with capers.
