Strawberry Glaze (or use Pineapple Glaze)

Strawberry glaze is a cooked glaze that can be used for strawberry pies for cakes. The strawberry glaze is made with cooked fresh strawberries andcornstarch along with suagr and water. Cooled and used on pies and cakes the strawberry glaze is worth a try.
  Fresh strawberries 2 Cup (32 tbs)
  Water 1 Cup (16 tbs)
  Cornstarch 1 1⁄2 Tablespoon
  Sugar 3 Cup (48 tbs)

Crush cup of the strawberries; add the water, and cook 2 minutes; sieve.
Mix cornstarch with sugar (amount of sugar depends on sweetness of berries); stir into hot berry mixture.
Bring to boiling, stirring constantly.
Cook and stir till thick and clear.(Add a few drops red food coloring, if needed.)
Cool to room temperature.
Place remaining strawberries atop cooled cheesecake; to match picture, circle with halved pineapple rings.
Pour glaze over the fruit and chill about 2 hours.
