Pineapple Glaze (or Use Strawberry Glaze)

In saucepan combine 3 tablespoons sugar, 1 tablespoon cornstarch; stir in 1 cup unsweetened pineapple juice and 1/4 teaspoon grated lemon peel.
Heat and stir till boiling; cook and stir till thick and clear.
Cool to room temperature; spread atop cooled cheesecake; chill 2 hours.
Trim with mounds of whipped cream and pineapple.
