Game Hens With Country Ham And Greens Stuffing And Bourbon Glaze

Ingredients
  Mustard greens/Swiss chard 6 Ounce (Young Variety)
  Young spinach 12 Ounce
  Peanut oil 4 1⁄2 Teaspoon (1 Tablespoon And 1 1/2 Teaspoons)
  Minced garlic 1 Teaspoon
  Minced onion 1⁄3 Cup (5.33 tbs)
  Diced ham 3⁄4 Cup (12 tbs) (Country Ham)
  Kosher salt 1 1⁄2 Pinch (A Good Pinch)
  Fresh black pepper To Taste (A Few Grinds)
  Cornish game hens 1⁄2 Pound, boned (As Required, Drumsticks And Wing Tips Left In)
For bourbon glaze
  Bourbon whiskey 2 Tablespoon
  Prepared mustard 2 Tablespoon
  Honey 1⁄3 Cup (5.33 tbs)
Directions

GETTING READY
1. Start by preheating the oven to 450°F, take the greens and throughly wash and dry them, then kale and tear into manageable pieces

MAKING
2. In a large skillet, heat the oil, and add the garlic and onion,cook for 1 to 2 minutes, keep stirring, now add the greens and kale, cook for 2 to 3 minutes, then add the ham and sprinkle with salt and pepper, and finally cook for 1 more minute and set aside to cool to room temperature
3. On a work surface, lay the birds skin side down, and fill the thighs with stuffing mixture, take the bird and divide the rest of the stuffing into 4 oval portions and pile onto the centers of the birds
4. Over the stuffing, place the skin up, wrap it on one side, use a trussing needle to sew up the birds, start sewing from the neck region
5. Lay the birds, and use your hands to shape them into their original shape, truss the legs closely to each other so they look like the whole birds, sprinkle with salt and pepper
6. In a roasting pan, place the hens and cook for 2 to 3 minutes
7. Meanwhile, let the birds roast, on the side combine the glaze ingredients, once roasted take out the birds and brush with the glaze ingredeints, cook for 5 minutes, once cooked transfer the birds on the broiler and turn it on
8. In a broiler, brush the birds with more glaze and broil for about 1 minute, let the hens rest for 3 to 4 minutes and then finally remove strings and trussing

SERVING
9. Serve hot or at room temperature and serve with a sauce of your choice
