Mix all ingredients except pork roast in medium bowl or 4-cup measure.
Microwave at HIGH (100%) until apricots are tender, 8 to 10 minutes, stirring 2 or 3 times during cooking.
Remove lemon peel.
Set glaze aside.
Place pork roast on roasting rack.
Brush with half of the glaze.
Place thin strips of aluminum foil over top of each end of roast.
Microwave at MEDIUM (50%) until internal temperature reaches 165°F., 60 to 70 minutes, removing foil strips after first 15 minutes and basting 2 or 3 times with glaze during cooking.
Let stand loosely wrapped in aluminum foil until internal temperature reaches 170°F., 10 minutes.
Spoon any remaining glaze over roast.
