Sweet Marrons Glace
|Sugar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
Use only perfect whole chestnust.
Peel and remove skins.
Boil sugar and water for 3 minutes, lowering the heat so the syrup does not burn.
Drop the chestnuts into syrup and boil for 3 minutes, then remove to a wire tray and cool.
Boil up syrup until it begins to thicken, then drop the chestnuts into the syrup again and boil for 3 minutes; remove to cool as before.
Do this twice more, then dry out thoroughly before storing in an airtight jar.
