German Chocolate Glaze
|Unsweetened chocolate square||2 Ounce (Two 1 Ounce Each Squares)|
|Confectioners sugar||1 Cup (16 tbs), sifted|
|Warm water||3 Tablespoon|
Melt chocolate and butter in the top of a double boiler over simmering water; stir to blend well.
Set top of double boiler on a damp cloth, add 1/2 cup confectioners' sugar and 1 tablespoon water; beat until smooth.
Add remaining sugar and water and beat until glossy.
Use to glaze eclairs, other pastries, or the tops of cakes.
