Grilled Fruit With Caramelized Port And Balsamic Glaze
|Cantaloupe||1 , peeled and cut into wedges|
|Honeydew melon||1 , peeled and cut into wedges|
|Pineapple||1 , cored, peeled and cut into spears|
|Olive oil||2 Tablespoon|
|Port||1 Cup (16 tbs)|
|Brown sugar||1 Cup (16 tbs)|
|Balsamic vinegar||1⁄2 Cup (8 tbs)|
|Fresh mint||1 Tablespoon, chopped|
|Freshly ground black pepper||1⁄2 Teaspoon|
Brush fruit with oil.
Lightly grill or barbecue.
Boil port and brown sugar in saucepan to reduce by one-half.
Add balsamic vinegar, mint and pepper.
