Strawberry Tart Glace
|Pastry||1 (L Crust 9 Inch Pie)|
|Cheese||16 Ounce, softened (2 Package)|
|Sugar||1⁄2 Cup (8 tbs)|
|Strawberries||1 Quart, hulled|
|Water||1⁄4 Cup (4 tbs)|
On lightly floured surface, roll pastry to 12-inch circle.
Place in 10-inch quiche dish.
Prick bottom and sides of pastry with fork.
Bake at 450°, 9 to 11 minutes or until golden brown.
Combine neufchatel cheese, 1/4 cup sugar, milk and vanilla, mixing at medium speed on electric mixer until well blended.
Spread onto bottom of crust.
Puree 1 cup strawberries.
Top neufchatel cheese mixture with remaining strawberries.
Combine remaining sugar and cornstarch in saucepan; gradually add pureed strawberries and water.
Cook, stirring constantly, over medium heat until mixture is clear and thickened.
Stir in food coloring.
Pour over strawberries; chill.
