Roast Goose With Orange Ginger Glaze

Ingredients
  Goose 12 Pound
  Salt To Taste
  Pepper To Taste
  Onion 1 , cut into pieces
  Celery stalks 1 Tablespoon, cut in pieces
  Apples 2 , cut into pieces
  Orange ginger glaze 1 Cup (16 tbs)
  Water cress 1
  Orange slices 1 Cup (16 tbs)
Directions

Sprinkle the cavity of the goose with salt and pepper.
Fill the cavity with the onion, celery, and apple pieces.
Close the neck and abdominal openings with skewers.
Place on a rack in a roasting pan.
Roast in a moderately slow oven (325°) until internal temperature reaches 180°, or until drumstick moves easily
Baste frequently during last 40 minutes with Orange Ginger Glaze until all glaze is used.
Decorate serving platter with water cress and orange slices.
