Carrots With Orange Ginger Glaze
|Grated orange rind||1 Teaspoon|
|Orange juice||3⁄4 Cup (12 tbs)|
|Unsalted butter/Margarine||1 1⁄2 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Black pepper||1⁄8 Teaspoon|
|Carrots||4 Large, peeled and cut diagonally into 1/2 inch slices|
1 ln a 10-inch nonstick skillet, combine the orange rind, orange juice, butter, honey, ginger, salt, and pepper and bring to a boil.
Add the carrots, Lower the heat, and simmer, covered, for 5 minutes or until the carrots are slightly tender but still firm.
2 Raise the heat to high and boil the mixture, uncovered, shaking the pan frequently, for 5 minutes or until the liquid has reduced to 3 tablespoons and the carrots are crisp-tenderand nicely glazed.
