New England Gingerbread

Ingredients
  Lard 1⁄3 Cup (5.33 tbs)
  Packed brown sugar 1⁄2 Cup (8 tbs)
  Molasses 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Sifted all purpose flour 2 Cup (32 tbs)
  Ginger 1 1⁄4 Teaspoon
  Cinnamon 1⁄4 Teaspoon
  Cloves 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Soda 2 Teaspoon
  Boiling water 1 Cup (16 tbs)
  Sweetened whipped cream 1⁄4 Cup (4 tbs) (adjust quantity as needed)
Directions

Heat oven to .550 degrees.
Crease a 9-inch square cake pan.
Cream lard.
Add sugar and continue creaming until well blended.
Beat in molasses and egg.
Sift flour, ginger, cinnamon, cloves and salt together into first mixture.
Add soda to boiling water and stir to blend.
Add to previous mixture and beat to blend.
Batter will be fairly thin.
Pour into prepared pan and bake 30 minutes or until top springs back when touched lightly in the center.
Serve warm or cold with whipped cream.
