Lemon Gingerbread With Peaches

Ingredients
  Packed brown sugar 3⁄4 Cup (12 tbs)
  Dark molasses 3⁄4 Cup (12 tbs)
  Margarine 1⁄2 Cup (8 tbs)
  Boiling water 1 Cup (16 tbs)
  Egg substitute 1⁄2 Cup (8 tbs)
  All purpose flour 2 Cup (32 tbs)
  Baking soda 2 Teaspoon
  Baking powder 3⁄4 Teaspoon
  Ground ginger 2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Ground cloves 1⁄2 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Lemon peel 1 Tablespoon
  Canned peaches/3 fresh peaches 16 Ounce, sliced (1 Can)
For lemon sauce
  Cornstarch 2 Tablespoon
  Sugar 1⁄3 Cup (5.33 tbs)
  Lemonade concentrate 1⁄3 Cup (5.33 tbs)
  Water 2⁄3 Cup (10.67 tbs)
  Grated lemon peel 1 Tablespoon
  Lemon juice 1 Teaspoon
Directions

GETTING READY
1) Preheat oven to 350F (175C).
2) Use a 9-inch square baking pan to spray with vegetable cooking spray.
3) In a large bowl place brown sugar, molasses and margarine. Pour in boiling water and combine all together thoroughly.
4) Stir in egg substitute and gradually add remaining ingredients except peaches, beat until smooth.

MAKING
5) Pour the batter in the prepared pan and place inside oven to bake for 40 minutes.
6) Allow cooling to cut into pieces.

SERVING
7) To serve, top with peaches and Lemon Sauce.
