|Egg||1 , beaten|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
1. Heat oven to 350°. Line a greased 8-inch square baking pan with waxed paper.
2. In a mixing bowl, pour boiling water over shortening; add sugar, molasses, and egg; beat well. Sift together the flour, salt, baking powder, baking soda, ginger, and cinnamon. Add sifted dry ingredients to shortening mixture; beat until smooth.
3. Bake in center of oven for 35 minutes, until a toothpick inserted into the center comes out clean. Cool in pan. Serve with a dollop of whipped cream, if desired.
