Spicy Ginger Crunchies
|All purpose flour||2 1⁄4 Cup (36 tbs), sifted|
|Baking soda||2 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground ginger||3⁄4 Teaspoon|
|Ground cloves||1⁄2 Teaspoon|
|Butter||3⁄4 Cup (12 tbs)|
|Vanilla extract||1 Teaspoon|
|Sugar||1 Cup (16 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
Sift flour, baking soda, salt, and spices together; set aside.
Cream butter with extract; gradually add sugar, beating until light and fluffy.
Add egg and molasses; beat thoroughly.
Gradually add dry ingredients to creamed mixture, mixing until blended.
Chill several hours.
Shape dough into 3/4 inch balls, roll in sugar and place 2 inches apart on greased cookie sheets.
Bake at 375Â°F 7 to 8 minutes.
Immediately remove to wire racks to cool.
