Poached Salmon With Ginger

Ingredients
  Salmon 1 Pound
  Ginger root 1 Tablespoon, grated
  Lemon slices 3
  Dry white wine 3 Tablespoon
  Lemon juice 1 Tablespoon
Directions

Set oven to 375°F
1. Place salmon on 2 layers of aluminum foil, large enough to make a tent over the fish.
2. Rub ginger into salmon, cover with slices of lemon. Sprinkle wine and lemon juice over the fish. Fold foil so that it makes a tent with the ends sealed too.
3. Place on baking sheet and bake at 375°F for 20 minutes (or longer if fillet is thicker than 1 inch). Carefully unfold the top of the foil. Transfer fish to serving platter. Pour cooking juices over fish and serve.
