Tri color melons with honey ginger
|Water melon||3⁄4 (seedless)|
|Ginger||2 Inch, julienned|
|Ginger||3 Inch (Blend a three inch piece of ginger with 4 tablespoon of water and strain))|
|Mint sprig||4 (for garnish)|
Using a parisan scoop, turn out melon balls from all the three.
In a bowl mix the ginger juice and honey. Add the melon balls to the mixture. Chill the melon balls for about 30 minutes.
Serve the melon balls in a martini glass with the juices. Garnish with ginger julians and mint leaves
