Tri Color Melons With Honey Ginger

Ingredients
  Cantaloupe 1 Small
  Honeydew 1 Small
  Water melon 3⁄4 (seedless)
  Ginger 2 Inch, julienned
  Ginger 3 Inch (Blend a three inch piece of ginger with 4 tablespoon of water and strain))
  Honey 4 Tablespoon
  Mint sprig 4 (for garnish)
Directions

Using a parisan scoop, turn out melon balls from all the three.
In a bowl mix the ginger juice and honey. Add the melon balls to the mixture. Chill the melon balls for about 30 minutes.
Serve the melon balls in a martini glass with the juices. Garnish with ginger julians and mint leaves
