Mango and Ginger Clouds
|Ginger stem pieces||3|
|Stem ginger syrup||45 Milliliter (3 Tablespoon)|
|Silken tofu||3 Ounce (75 Gram / 1/3 Cup)|
|Pistachio nuts||6 , chopped|
1. Cut the mangoes in half, remove the stones and peel. Roughly chop the mango flesh.
2. Put the chopped mango in a food processor bowl, with the ginger, syrup and tofu. Process the mixture until smooth and spoon into a mixing bowl.
3. Put the egg whites in a bowl and whisk them until they form soft peaks. Fold them lightly into the mango mixture.
4. Spoon the mixture into wide dishes or glasses and chill before serving, sprinkled with the chopped pistachios.
