Ginger Lime Bars

  Low fat honey graham cracker crumbs 1 1⁄4 Cup (20 tbs)
  Light butter 1⁄4 Cup (4 tbs), melted
  Minced crystallized ginger 2 Tablespoon
  Granulated sugar 2 Tablespoon
  Cooking spray 4
  Eggs 3 Large, lightly beaten
  Granulated sugar 3⁄4 Cup (12 tbs)
  Grated lime rind 2 Teaspoon
  Fresh lime juice 1⁄3 Cup (5.33 tbs)
  All purpose flour 3 Tablespoon
  Peeled and grated fresh ginger 2 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Salt 1⁄8 Teaspoon
  Powdered sugar 2 Teaspoon

1. Preheat oven to 350°.
2. Combine first 4 ingredients in a mixing bowl; mix well. Press into an 8-inch square baking pan coated with cooking spray.
3. Bake at 350° for 12 minutes; cool slightly on a wire rack.
4. Whisk together eggs and next 7 ingredients until smooth. Pour egg mixture over prepared crust. Bake at 350° for 20 to 22 minutes or until set. Cool completely on wire rack. Sift powdered sugar evenly over top.
