Ingredients
  Herring fillets 6 , smoked and salted
  Olive oil 3 Tablespoon
  Sweet eating apples 2
  Sauerkraut 1 Pound
  Mild onions 2
  Lemon 1
  Heavy cream 2 Tablespoon
  Plain yogurt 1 Cup (16 tbs)
  Pepper 1
  Parsley 1 Bunch (100 gm)
Directions

1 Cut the herring fillets into small pieces. Put them on a deep plate and pour the oil over them.
2 Peel, core and dice the apples.
3 Wash the sauerkraut in fresh water. Drain it thoroughly, squeezing with the hands to extract all the water. Put it into a cloth, dry it well, then separate the shreds.
4 Peel the onions. Cut them into rounds, then separate into rings. Squeeze the juice from the lemon.
5 Mix the lemon juice with the cream and yogurt. Add pepper to taste and blend all these ingredients together.
6 Mix the sauerkraut and the diced apple, pour on the lemon-flavored yogurt and stir gently.
7 Wash, dry and chop the parsley.
8 Arrange the sauerkraut and apple salad around the edge of a serving dish.
9 Drain the herring fillets and place them in the center of the dish. Cover them with the onion rings. Sprinkle with chopped parsley and serve very cold.
