German Tea Muffins
|All purpose flour||2 Cup (32 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Orange rind||1 Tablespoon, grated|
|Almonds||1⁄2 Cup (8 tbs), chopped|
|Golden raisins||1⁄2 Cup (8 tbs)|
|Eggs||2 , beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Butter||1⁄2 Cup (8 tbs), melted|
|Flavoring||1 Tablespoon (rum or 12 tsp rum)|
Mix together flour, sugar, cinnamon, baking powder, grated orange rind, almonds and raisins.
In another bowl, beat together eggs, milk, melted butter, vanilla and rum.
Make a well in the dry ingredients and add the milk and egg mixture, stirring lightly and quickly.
Spoon into greased muffin cups and bake until tester comes out clean and muffins are lightly brown.
Bake at 375 degrees 25-30 minutes
