Hot German Potato Salad

Ingredients
  Potatoes 6 Large
  Bacon 1⁄2 Pound
  Onion 1 , diced
  Flour 1 Tablespoon
  Vinegar 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Sugar 1 Tablespoon
  Angostura bitters 2 Teaspoon
Directions

Boil potatoes in salted water to cover; peel and cube.
Dice bacon; fry in large skillet until brown and crisp.
Remove bacon bits; drain on absorbent paper.
Saute onion in bacon drippings until soft.
Stir flour into onion mixture.
Mix vinegar, 112 cup water, salt, pep- per and sugar together.
Add to flour mixture gradu- ally, stirring constantly, over low heat until thick- ened.
Add bitters; cook until sauce is smooth and glossy.
Add potatoes; heat through.
Add bacon bits; mix well.
Serve warm.
Garnish with parsley.
