German Potato Salad

Ingredients
  Lean bacon slice 8 , chopped into 1 inch pieces
  Small red potatoes 8 Cup (128 tbs), sliced
  Mayonnaise 6 Tablespoon
  Packed brown sugar 1⁄4 Cup (4 tbs)
  Red onion 2 Tablespoon, grated, juice retained
  Spicy brown mustard 2 Teaspoon
  Coarsely ground black pepper 1⁄2 Teaspoon
  Cider vinegar 6 Tablespoon
  Green onion 1⁄4 Cup (4 tbs), sliced
Directions

MAKING
1. In a medium sized bowl, combine red onion, mustard, brown sugar, pepper and vinegar. Mix well.
2. Add potatoes and half quantity bacon. Mix well and transfer on to serving bowl.

SERVING
3. Garnish with green onions, bacon and serve immediately.
