German Potato Salad
|Lean bacon slice||8 , chopped into 1 inch pieces|
|Small red potatoes||8 Cup (128 tbs), sliced|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Red onion||2 Tablespoon, grated, juice retained|
|Spicy brown mustard||2 Teaspoon|
|Coarsely ground black pepper||1⁄2 Teaspoon|
|Cider vinegar||6 Tablespoon|
|Green onion||1⁄4 Cup (4 tbs), sliced|
1. In a medium sized bowl, combine red onion, mustard, brown sugar, pepper and vinegar. Mix well.
2. Add potatoes and half quantity bacon. Mix well and transfer on to serving bowl.
3. Garnish with green onions, bacon and serve immediately.
