German Spinach Salad

Ingredients
  Baby spinach leaves 1 Pound (Use Small, Fresh Leaves)
  Mayonnaise 1⁄2 Cup (8 tbs)
  Dairy sour cream 1⁄2 Cup (8 tbs)
  Anchovies 6 , minced
  Chopped green onion tops 1 1⁄2 Tablespoon
  Minced parsley 1 1⁄2 Tablespoon
  Vinegar 1 1⁄2 Tablespoon
  Fresh lemon juice 1 1⁄2 Tablespoon
  Garlic 1⁄2 Clove (2.5 gm), minced
  Garlic croutons/Cheddar cheese cubes 1 Cup (16 tbs)
Directions

MAKING
1. Prepare the spinach by washing and drying them.
2. In a bowl mix remaining ingredients except cheese, add to spinach and mix lightly.

SERVING
3. Garnish with cheese and serve.
