German Style Potato Salad
|Bacon slice||4 , cooked and crumbled, reserve drippings|
|Sugar||1⁄2 Cup (8 tbs)|
|Cider vinegar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Salad potatoes||4 Pound, cooked and sliced|
|Green onions||4 , chopped|
Add enough oil to bacon drippings to make 1/2 cup.
Add sugar, flour, salt and pepper to drippings; stir until smooth.
Gradually stir in vinegar and water; cook 3 minutes, stirring constantly.
Pour over potatoes and onions; set aside at room temperature for 3 hours.
Sprinkle with bacon and serve.
Makes 10 to 12 servings.
