Red Cabbage In The Pot

Ingredients
  Red cabbage 2 Pound (1 Head)
  Butter 4 Tablespoon
  Onions 3 , sliced
  Cooked apples 1 Pound, peeled, cored and quartered
  Cooking apples 1 Pound, peeled, cored and quartered
  Garlic 2 Clove (10 gm), finely chopped
  Ground nutmeg 1⁄4 Teaspoon
  Allspice 1⁄4 Teaspoon
  Cinnamon 1⁄4 Teaspoon
  Thyme 1⁄4 Teaspoon
  Caraway seeds 1⁄4 Teaspoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Grated orange rind 1 Teaspoon
  Orange peel strips 2
  Orange peel strip 2
  Brown sugar 2 Tablespoon
  Red wine 1 1⁄4 Cup (20 tbs)
  Wine vinegar 2 Tablespoon
Directions

MAKING
1 Wash the cabbage throughly.
2 Shred finely,removing central core, ribs and outer leaves.
3 In a saucepan, add butter and cook the cabbage , covered, for 5 minutes.
4 In a deep, ovenproof casserole arrange cabbage, onion and apples in layers until the casserole is full.
5 Season each layer with garlic, spices, salt, pepper, grated orange rind and orange peel.
6 Sprinkle brown sugar over the top and add wine, wine vinegar and a little hot water.
7 Cover and simmer in a 375 degrees oven until tender. Add some more wine if needed.

SERVING
8 Serve hot.
