Pfeffernüsse

Literally translated from German, the name Pfeffernüsse means pepper nuts! These cookies bring together some varied flavors including pepper and anise! Traditionally prepared during Christmas, these are a great snack. Remembner to plan ahead when making these, because it will be a good week before they soften and you can comfortably bite into them!
Ingredients
  Sifted flour 4 Cup (64 tbs)
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Cinnamon 1 Tablespoon
  Cloves 1 Teaspoon
  Nutmeg 1 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Cardamom seeds 1 Tablespoon
  Anise 1 Teaspoon
  Candied orange peel 1⁄4 Pound
  Citron 1⁄2 Pound
  Butter 2 Tablespoon
  Confectioners sugar 2 1⁄2 Cup (40 tbs)
  Eggs 5
  Lemon rind 1⁄2 Teaspoon
  Milk 1⁄4 Cup (4 tbs)
  Confectioners sugar 1 Cup (16 tbs)
Directions

GETTING READY
1) Grease a baking sheet.

MAKING
2) Combine and sift the flour, soda, salt, and spices.
3) Add in and mix the seeds and orange peel and citron.
4) Combine the butter and sugar.
5) Beat in the egg yolks and add into the butter mix with the lemon peel.
6) Stir in the flour-fruit mix.
7) Fold in the stiffly beaten egg whites.
8) Refrigerate for about 1 hour.
9) Flour hands and shape into hickory nut-sized balls.
10) Arrange on the baking sheet.
11) Cover with a towel and stand for several hours.
12) Combine the milk and 2 1/2 cups confectioners' sugar.
13) Brush the cookies with this mix.
14) Place in the oven at 350°F. and bake for 15 to 20 minutes.
15) Allow to cool.
16) Store in a tightly covered container and allow to age for at least a week.

SERVING
17) Coat with confectioners' sugar and serve.
