Flaming Blintzes

Ingredients
  Butter 1⁄3
  Flour 1⁄2 Cup (8 tbs)
  Water 1 Cup (16 tbs)
  Eggs 5
  Salt To Taste
  Hoop cheese 1 Pound, grated
  Sugar 1 Tablespoon
  Sour cream 2 Tablespoon
  Cherry pie filling 1 Can (10 oz)
  Canned crushed pineapple 1 Cup (16 tbs) (Drained)
  Rum/Kirsch 1⁄4 Cup (4 tbs)
Directions

MAKING
1) In a bowl sift the flour and then add in the water and beat till a smooth batter is obtained
2) Add in 3 eggs, butter and the salt and mix well
3) Heat a skillet, and add enough batter to cover the bottom of the pan
4) Tilt the pan to spread evenly
5) Cook till the bottom side is browned
6) Turn the cake onto a clean towel
7) Repeat with the remaining batter
8) In a bowl, combine the cheese, eggs, sugar, sour c ream and spoon a teaspoon each onto each cake
9) Fold the sides and then roll the cake into a roll
10) Place the rolls in a greased baking dish
11) Bake at 375F for about an hour
12) Combine the cherry filling and the pineapple in a dish to lightly heat through
13) Pour the rum into the cherry mixture and then set aflame
14) Spoon the mixture over the blintzes

SERVING
15) Serve immediately
