Entrecote Meyerbeer

Ingredients
  Entrecote 4
  Oil 4 Tablespoon
  Garlic salt 1 Teaspoon
  Black pepper 1 Teaspoon
  Lamb kidney 1
  Salt 1 Teaspoon
  Madeira 1⁄2 Cup (8 tbs)
  Beef bouillon cube 1
  Cream 5 Tablespoon
  Canned truffles 3 Tablespoon, chopped
  Parsley sprigs 1
Directions

Trim the steaks.
Heat the oil in a frying pan and fry the steaks for 2 minutes on each side, remove and season with the garlic salt and pepper; keep warm.
Slice the kidney thinly, sprinkle with salt and fry for 1 minute in the frying pan.
Arrange on the steaks.
Stir the Madeira into the sediment in the frying pan and dissolve the bouillon cube in it.
Bring to the boil.
Remove from the heat and stir in the cream and truffles, if used.
Spoon over the steaks.
Serve garnished with parsley.
