German Style Apple Stew

  Apple juice/Apple cider 1 1⁄2 Cup (24 tbs)
  Water 1 1⁄2 Cup (24 tbs)
  Carrots 2 Medium, halved lengthwise, then cut into 1 1/2-inch pieces
  Stalk celery 1 , sliced
  Sliced green onion 1⁄2 Cup (8 tbs)
  Cider vinegar 2 Tablespoon
  Instant chicken bouillon granules 2 Teaspoon
  Caraway seed 1 Teaspoon
  Pepper 1 Dash
  Monkfish fillets 1 Pound, skinless (About 1 Inch Thick)
  Head cabbage 1⁄4 Small, finely shredded to make about 1 1/4 cups
  Apple 1 , cored and thinly sliced

In a large saucepan combine apple juice or apple cider, water, carrots, celery, onion, vinegar, bouillon granules, caraway seed, and pepper.
Bring mixture to boiling, then reduce heat.
Cover and simmer for 10 minutes.
Meanwhile, cut fish into 1-inch pieces.
Carefully add fish to juice mixture.
Return just to boiling, then reduce heat.
Cover and simmer gently for 2 minutes.
Add the cabbage and apple.
Return just to boiling, then reduce heat.
Cover and simmer gently about 2 minutes more or till fish is done and vegetables are nearly tender.
