German Sour Cherry Soup
|Black cherries/Red cherries||1 1⁄2 Pound|
|Sugar||1 Teaspoon (Leveled)|
|Red wine||1⁄4 Pint|
|Butter||1 1⁄2 Ounce|
Simmer the cherries in the water, adding little sugar.
Blend the wine with the flour, add to the soup, bring slowly to the boil, stirring until very smooth.
Add the butter and blend carefully with the soup.
Taste and if necessary add a little more sugar, but this soup must be fairly sharp.
Serve with crusty bread.
