Noel Fruit Cookies(Lebkuchen)
|Brown sugar||3⁄4 Cup (12 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Dark molasses||1⁄2 Cup (8 tbs)|
|Sifted enriched flour||3 Cup (48 tbs)|
|Cinnamon||1 1⁄4 Teaspoon|
|Nutmeg||1 1⁄4 Teaspoon|
|Chopped mixed candied fruits and peels||1⁄2 Cup (8 tbs)|
|Slivered blanched almonds||1⁄2 Cup (8 tbs)|
Beat egg; add brown sugar and beat till fluffy.
Stir in honey and molasses.
Sift together dry ingredients; add to first mixture; mix well.
Stir in fruits, peels, nuts.
Chill several hours or overnight.
On lightly floured surface, roll to 1/4 inch.
Cut in rectangles 3 1/2x2 inches.
Place on greased cooky sheet.
Bake in moderate oven (350°) about 12 minutes.
Cool slightly before removing from pan.
