Herring Salad German

Ingredients
  Chopped pickled herring 4 Cup (64 tbs)
  Chopped cooked veal 2 Cup (32 tbs)
  Hard cooked eggs 2
  Pickled beets 1 1⁄2 Cup (24 tbs)
  Chopped onions 1⁄2 Cup (8 tbs)
  Chopped pickles 1⁄2 Cup (8 tbs)
  Celery stalks 2 , chopped
  Diced boiled potatoes 1⁄2 Cup (8 tbs), cold
  Diced apples 3 Cup (48 tbs)
  Chopped blanched almonds 1 Cup (16 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Vinegar 1⁄2 Cup (8 tbs)
  Horseradish 2 Tablespoon, mixed
  Parsley 1
Directions

1. Mix all ingredients except sugar, vinegar and horseradish.
2. Heat the vinegar and sugar in an enamel or glass saucepan until the sugar dissolves. Add the horseradish. Mix and pour over the salad.
3. Shape into an oblong loaf on a large platter. Chill 30 minutes or longer.
4. Garnish with parsley.
