Apple And Raisin Kuchen

  All purpose flour 1 Cup (16 tbs)
  Whipped cream 1
  Baking powder 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Sugar 2 Tablespoon
  Butter 2 1⁄2 Tablespoon, softened
  Eggs 2 , beaten
  Milk 2 Tablespoon
  Apples 5 Cup (80 tbs), sliced (4 large)
  Seedless raisins 1⁄2 Cup (8 tbs)
  Sugar 2⁄3 Cup (10.67 tbs)
  Cinnamon 1 Teaspoon
  Orange rind 1 Tablespoon, grated

Preheat oven to 425°.
Grease 8-inch springform pan.
Sift flour, baking powder, salt and 2 tablespoons sugar together in mixing bowl.
Cut in butter until mixture is crumbly.
Add eggs and mix well.
Slowly add milk, stirring constantly.
Spread dough on bottom and partly up sides of prepared pan with spatula.
Place apples and raisins in saucepan with water to cover.
Cook until apples are tender but not mushy; drain.
Combine 1/3 cup sugar, cinnamon and lemon rind.
Add to apples and raisins.
Stir thoroughly.
Spoon fruit mixture on top of pastry in prepared pan.
Bake 50-60 minutes or until filling is firm and crust is golden brown.
Remove cake from pan to board and cut into individual servings with electric knife.
