German Style New Potato Salad
|Tiny new potatoes||1 Pound|
|Torn lettuce||2 Cup (32 tbs)|
|Torn curly endive||1 Cup (16 tbs)|
|Hard cooked eggs||2 , chopped|
|Thinly sliced radishes||1⁄4 Cup (4 tbs)|
|Sliced green onion with tops||3 Tablespoon|
|Vinegar||1⁄3 Cup (5.33 tbs)|
|Seasoned salt||1 Teaspoon|
|Celery seed||1⁄4 Teaspoon|
Peel strip around center of each potato.
Cook potatoes in boiling water.
Halve any large potatoes.
In bowl combine cooked potatoes, lettuce, curly endive, eggs, radishes, and green onion.
In skillet cook bacon till crisp.
Drain, reserving 1/3 cup drippings.
Crumble bacon; add to potato mixture.
To reserved drippings in skillet add vinegar, seasoned salt, celery seed, and pepper.
Heat to boiling; pour over potato mixture.
Toss quickly; serve at once.
